Quinoa breakfast treat!


1 cup quinoa grains, soaked
1 cup rolled oats, not instant
1/4 teaspoon sea salt
3 cups water
1/2 cup chopped dates
1 teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon vanilla

Place first four ingredients in a pot and cover.
Bring to boil and then reduce to low heat for around 30 mins.
Mix in remaining ingredients.
Turn off heat and let sit, covered for about 5 mins.

This tastes great when served with assorted berries or nuts.

1 tablespoon olive oil
3 green onions, thinly sliced
1 red bell pepper diced
1 teaspoon dried oregano leaves
1 clove garlic
1 cup quinoa
pinch of sea salt
1/2 cup frozen peas, thawed
1/2 cup tomatoes, seeded and chopped (or halfed cherry tomatoes)

In a meduim saute pan with a lid, warm oil over medium high heat, Add onions and pepper and cook, stirring, until soft, for about 5 minutes.

Add oregano and garlic, and cook for about 30 seconds.
Stir in quinoa, then pour in two cups of water and salt.

Bring to a boil, then reduce heat, cover and simmer until liquid is absorbed and grains show opaque lines around the egdes, about 12 minutes.

Turn off heat and stir in peas and tomatoes. Cover pan again and let stand until vegetables are warmed through, about 5 minutes. Keep warm until ready to serve.

Low-Fat Quinoa Chili (ready in 30 mins-makes two servings)

1/2 cup quinoa
1 cup water
1- 16oz can black beans
1 tsp. chili powder
1 tsp. curry powder
1 tsp. cinnamon
2 diced scallions
1/4 cup diced tomatoes
1/4 tsp. stevia (to taste)

1. Bring quinoa and water to boil and simmer for 15 mins. until germ separates.

2. In a separate pot simmer black beans together with seasonings for 10 mins. Allow beans to cool and thicken for 5 mins.

3. Combine quinoa and the bean mixture together. Top with tomatoes and scallions and serve.

I used a red quinoa here, but you can use whatever kind you like, white/buff colored seems to be the most common.
Also: low-fat soy milk may replace the low fat milk, blueberries may replace the blackberries, dark honey may replace the agave nectar, and walnuts may replace the pecans.



1 cup organic 1% low fat milk
1 cup water
1 cup organic quinoa, (rinse quinoa)
2 cups fresh blackberries, organic preferred
1/2 teaspoon ground cinnamon
1/3 cup chopped pecans, toasted*
4 teaspoons organic agave nectar, such as Madhava brand


Combine milk, water and quinoa in a medium saucepan. Bring to a boil over high heat. Reduce heat to medium-low; cover and simmer 15 minutes or until most of the liquid is absorbed. Turn off heat; let stand covered 5 minutes. Stir in blackberries and cinnamon; transfer to four bowls and top with pecans. Drizzle 1 teaspoon agave nectar over each serving.
Serves 4.
*While the quinoa cooks, roast the pecans in a 350F degree

Funny you start a thread on Quinoa because I just tried it for the first time last week. Its different but I like it. Easy to flavor for just about any meal or food pairing. And its a whole grain with some complete protein to boot! Not bad to explore the culinary boundries!

man I'm going to have to try that chili one!

1 cup uncooked red quinoa
2 cups water
2 cups cherry tomatoes, halved
2 avocados, diced
1 cup artichoke hearts
1/4 cup chopped fresh basil
2 tablespoons of pine nuts, toasted
2 tablespoons of capers, to taste

Caramelized onions:
1 tablespoon olive oil
1 thinly sliced red onion

Basic vinaigrette dressing:
3 tablespoons balsamic vinegar
2 tablespoons fresh lemon or lime juice, with zest
2 cloves minced garlic
1/3 cup extra virgin olive oil

salt and pepper to taste

Serves 4-6 as a side dish

Preparation
Bring the quinoa and water to boil. When the water boils, reduce the heat to a simmer and cook until the water is absorbed, approximately 10 minutes. When cooked, quinoa has a texture similar to perfectly cooked pasta, or rice. Strain and rinse well under cold water.

While the quinoa is cooking, in a skillet heat olive oil over medium heat and saute the onions until transparent.

Prepare the vinaigrette by combining the ingredients and whisking.

In a large salad bowl, toss all of the ingredients together, including caramelized onions and the vinaigrette.

To Serve
Serve cold or at room temperature. With very little to spoil, this would make an excellent accompaniment on a picnic. Couple this salad with fresh greens, chicken or fish for protein, and your wine of choice, and you have an excellent, healthy meal.

2 cups quinoa
1 tbsp olive oil
3/4 tsp ground cumin
1 medium shallot, halved lengthwise and thinly sliced crosswise
2 tsp kosher salt, plus additional for seasoning, divided
3 cups low-sodium chicken broth
2 cups cooked chickpeas
6 medium scallions, thinly sliced crosswise
2 tsp freshly squeezed lemon juice
1 tsp lemon zest
Fresh-ground black pepper, to taste

INSTRUCTIONS:

Rinse quinoa and drain. Heat oil in a medium pot over medium heat. When it shimmers, add cumin and cook until fragrant. Add shallots, season to taste with additional salt and cook until just soft. Add quinoa and stir frequently until moisture evaporates and it makes a popping noise, about 5 minutes.

Add broth and 2 tsp salt, stir briefly and return to a boil. Cover, reduce heat to low, and simmer until quinoa absorbs liquid and grains are tender, about 15 minutes.

Stir in remaining ingredients until well combined, season well with salt and pepper to taste, and serve.

Quinoa Tuna Salad
Ingredients:
1 cup quinoa
2 5-oz. cans solid white tuna, drained
2/3 cup roughly chopped walnuts or pecans
1 red bell pepper, diced
2 tomatoes, chopped
1 cup chopped parsley
1/2 cup chopped fresh mint
Salt & pepper to taste
1/4 cup extra-virgin olive oil
Juice of 1/2 lemon

Directions:
In a small saucepan, heat quinoa in 2 cups of water until boiling. Reduce heat to low & simmer covered for 12 minutes or until water is fully absorbed. Remove from heat & allow quinoa to rest for five minutes, then fluff with a fork. In a large bowl, combine tuna, nuts, bell pepper, tomatoes, parsley, mint, & salt & pepper. Mix in quinoa, olive oil & lemon juice.

Nutritional Facts: (Serves 3-4)
433 calories, 29 g protein, 21 g carbs, 27 g fat (4 g saturated), 4 g fiber, 12 g sugar, 970mg salt.

Side Note:
Toasting quinoa for a few minutes in a dry skillet over medium heat before cooking enhances its nutty flavor

The ingredients used for this recipe are very healthy and also very protein food, Though it is highly nutritions, it is very light and won't support the weight gain. Could you please produce some attachment links regarding the details of such types of recipes.
