Oatmeal Protein Pancakes
1 cup oatmeal
1/3 cup plain or vanilla protein powder
2 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. salt (optional)
3 egg whites
1 cup fat-free milk
1/2 cup unsweetened applesauce
1 tsp. vanilla extract
nonstick cooking spray

1. Mix first five ingredients together in a medium bowl. Add egg whites, milk, applesauce and vanilla. Blend well.

2. Preheat a large skillet over medium heat and coat with cooking spray. Pour batter into skillet 1/4 cup at a time.

3. Turn pancakes when bubbles form and cook until second side is golden-brown. Serve with low-sugar syrup, fresh fruit or thawed frozen fruit.
