cup (uncooked) Texmati rice
7 ounces fat-free ground turkey breast
2 shallots, chopped
cup string beans, cut into quarter-inch pieces
cup carrots, sliced
1 tbsp. extra virgin olive oil
splash white wine
cup chicken stock (low sodium)
1 tsp. chopped fresh parsley
1 tsp. chopped fresh cilantro (optional)
tsp. black pepper
tsp. salt

Cook rice according to package instructions and set aside. In a skillet, heat the extra virgin olive oil. Add the shallots and cook over medium heat until light brown. Add the ground turkey breast. Mix well, stirring to the break up the meat. Add the carrots and string beans; cook for 1 minute. Add the wine, and cook for about 3 minutes. Add the chicken stock, spices and herbs. Reduce heat, cover and cook for approximately 20 minutes. Stir the rice into the turkey mixture and serve.
