Ingredients:
• 6 oz. baby red potatoes
• 8 oz. chicken breast, cut into 1” cubes
• ½ green bell pepper
• 4 button mushrooms (sliced)
• ½ Spanish onion (sliced)
• 1 tbls. extra virgin olive oil
• 1 pinch salt
• 1 pinch oregano
• 1 pinch hot red pepper flakes
• 1 pinch paprika
• 1 tbls. chopped basil
• ¼ cup chicken broth
• Splash of white wine

Directions (one serving):
In a sauté pan, heat olive oil for about one minute over medium heat. Add the potatoes, peppers, mushrooms and onions. Stirring constantly, cook till the onions are slightly golden. Add the chicken breast. Mix well and add the wine. Cook for two minutes at medium heat. Add the chicken broth. Reduce heat to low. Add the spices and herbs. Cover. Cook for about 20 minutes at low temperature. Place in a serving dish.
