• 8 oz. Chicken Breast
• 2 plum tomatoes, chopped
• 1 small red onion, chopped
• 2 fresh basil leaves, chopped
• 1 clove fresh garlic, minced
• 2 pinches of salt
• 2 pinches of pepper
• 1 pinch of oregano
• 1 tbls. of extra virgin olive oil
• 2 tbls. of balsamic vinegar

This maybe one of the simplest recipes. All that needs to be cooked are the chicken breasts, those are plain grilled. While you are grilling the chicken breasts, you can chop your onion and tomato and mince your garlic. Place those ingredients in a mixing bowl and add the salt, pepper, oregano, basil, extra virgin olive oil and balsamic vinegar. Once you’ve done that all you need to do is mix all the ingredients together. Once you’ve mixed this well, place the freshly grilled chicken breasts atop the bruschetta mix and serve. This is the same bruschetta you find in most Italian restaurants. On a cheat day, try serving it atop some nice toasted Italian bread!!!
