Ingredients:

1 tbsp. olive oil
1/2 onion, chopped
1/2 red pepper
1 10-oz. can reduced-fat cream of mushroom soup
1/2 cup low-fat (1%) milk
1 cup fat-free cheddar cheese
1 cup frozen peas
2 6-oz. cans albacore tuna in water, drained
3 cups whole-grain egg noodles, cooked

Directions:
Preheat oven to 350 degrees . In a large skillet, heat olive oil over medium heat. Add onion & saute until golden brown. Add soup, milk, 3/4 cup of cheese, peas & tuna; stir until combined. Put noodles in 2-quart baking dish, pour soup mixture overtop, & then mix. Top with remaining 1/4 cup of cheese. Bake for 30 minutes or until bubbling & lightly browned on top.
