Elk Meat

What do you think of Elk??? I have an elk farm about a mile down the road from me (seriously) and I am thinking about using some of that.

It's more ideal then beef really. It's really, really lean meat. And Yes, I've eatten alot of it.

I have two reindeer in the freezer from hudson bay right now.
