View Full Version : Chicken Chili Over Brown Rice

8 oz. ground chicken
1/2 cup Spanish onion (chopped)
14.5 oz. can diced plum tomatoes
7.5 oz. can kidney beans
1 tsp. chili powder
1/2 cup brown rice
Olive oil cooking spray
Salt (to taste)
Fresh black pepper (to taste)

Cook rice according to package instructions and set aside. Coat a large skillet with olive oil cooking spray & preheat. Place ground chicken breast in skillet & cook until golden brown. Add the onions. Cook for approximately two minutes, & then add the diced plum tomatoes along with kidney beans, the chili powder, salt & pepper. Bring to a boil. Cover & let simmer for approximately 30 minutes. Stir in the rice, & serve.
