Ingredients:Serves 6

1/2 cup Dijon mustard
1/4 cup low-fat mayonnaise
1 Tbsp. chopped fresh tarragon
1 Tbsp. packed golden brown sugar
2 lbs. trimmed boneless pork loin, cut crosswise into 1/2-inch slices
Nonstick cooking spray

Directions:
Coat the grill rack of a barbecue with nonstick cooking spray & heat with medium-high flames. Whisk mustard, mayonnaise, tarragon & brown sugar together in a medium bowl, & brush sauce generously on both sides of pork cutlets. Grill pork until it's just cooked through-don't overcook-& is firm to the touch, 2-3 minutes per side.
