Here are two recipes that even the most novice cook can handle. They are stolen from Giada (Everyday Italian on Food Network) with a couple of tweaks.

Cod with lima beans


1 (10-ounce) bag frozen lima beans
3 tablespoons olive oil
4 tablespoons chopped fresh parsley leaves
Salt
Freshly ground black pepper
3 (6-7ounce) pieces cod
White wine (optional)

In a bowl combine olive oil, lima beans, parsley, salt and pepper. Take three pieces of aluminum foil, large enough to make pockets for the fish. Place mixture onto each piece of foil, then top with fish. Splash with white wine then fold/close packet. Bake in 375 degree oven for about 15 minutes or until fish is cooked through.

Collard greens


4 tablespoons olive oil
2/3 C chopped onion (not too fine, though)
2 tablespoons garlic
1 bunch collard greens (or swiss chard or mustard greens)
Fresh ground pepper
3 tablespoons soy sauce (low sodium preferred)

In a pan, saute garlic and onions in olive oil until onions are translucent (in other words, no caramelizing!). Add collard greens, ground pepper and soy sauce. Once the greens have shrunk, turn heat to simmer and let cook for another 5-10 minutes or until greens are to desired tenderness.
