Ingredients:
4 medium zucchini
3 5-oz. cans chunk white albacore tuna
2 tbsp. light mayonnaise
1/2 cup low-fat cheddar cheese, shredded

Directions:
Cut each zucchini lengthwise in half &, using a spoon, scrape out & discard the seeds, creating a well & being careful not to cut through the walls or bottom of the zucchini. Place zucchini cut-side down in a baking dish; fill with water until zucchinis are halfway submerged. Cover dish with plastic wrap & microwave for five minutes, or until zucchinis have softened. In a small bowl, combine tuna & mayonnaise. Drain zucchinis & fill each well with tuna. Sprinkle cheese evenly overtop & microwave uncovered for one minute, or until cheese is melted.
