1 cup Peanut Butter, chunk style
48 tsp (or 1 cup) Splenda for Baking
2 large fresh egg whites
1 tsp Vanilla Extract

1) In a large bowl, mix all the ingredients until well-blended.
2) Roll the peanut butter mixture into 36 teaspoons-sized balls.
3) Arrange on parchment lined cookie sheet about 1/2" apart.
4) Bake in a preheated 350°F oven for 10 minutes.
5) Remove to a cooling rack.
Makes 36 one inch cookies.

MADE THESE LAST NIGHT AND THEY ARE GOOOOOD!! THEY ARE A LITTLE DRY BUT WHEN YOU DIET HARD THEY ARE SOOO AMAZING!!

Ya great thanks for that recipe my mouths watering now. I cant eat any PB on my fricking diet...but your damn sure Ima try it when diets done, maybe add some choco chips to it, lol.

Definately trying this after my show this wkend!!
But I think I'll sub the Splenda for Truvia. And maybe a cpl extra eggwites will help w/ the moisure...

I use less splenda than PNB, like 2/3 cup S to 1 cup PNB.. Too many egg whites and they taste eggy... I've also played with cutting a protein bar up and adding that, or just extra peanuts... Hershey's makes a sugar free chocolate chip, but be careful with adding them as "excessive consumption may cause laxitive effect."

They sound Yum, but I don't like dry things. It turned me off when you said they were a bit dry. I have to have moist.

They have splenda fortified with fiber now, so you can be rest assured when you're munching down those cookies at 3am that you'll be having fun in the morning...

doesn't splenda for baking have 1/2 sugar? I might be totally wrong on this, but one of those types of products was partially sugar. I'm sure no one here would be using that though.
