Pumpkin Custard

1 large can pumpkin (28 ounces)
2 cups applesauce
1 quart egg whites
1 Tbspn cinnamon
1 tspn nutmeg
1/4 teaspoon ginger
1/2 cup - 3/4 cup Splenda

Preheat oven to 350

in a food processor add Pumpkin, applesauce, spices, and splenda and blend; then add eggwhites

Pour into 2 large pyrex dishes sprayed with PAM

Put in oven - 30 to 45 minutes - knife should come out clean.
Sometimes the middle puffs up
You can use any pumpkin pie spices that you like

1 cup of Fat Free Cottage Cheese
Fruit of choice - I've used blueberries, raspberry, strawberries, banana's, pineapple
Packet of Equal or Splenda

Add cottage cheese to food processor or mini chopper (i hate the curds so I mix till creamy)
Add Fruit and Splenda
Pulse/process until the fruit is at your desired consistancy

Enjoy

1 - 2 scoops Chocolate Protein Powder
.5 - 1 tbspn Udo's oil or Mac Nut oil

Add yogurt and protien to a mini chopper/food processor, mix well.

Drizzle in oil as you continue to pulse mixture

Maybe my taste buds can be a bit strange from time to time but when I can have this on diet.... it taste like chocolate pudding to me, just a bit thinner.

I just had cottage cheese with apple butter and a sprinkle of splenda. Been a long time since I had that. Remember when I used to eat it all the time??

Try it with FAGE Greek Yogurt instead. Zero fat, 20g protein per serving - and it's thicker than regular yogurt.

9 g carbs in the zero fat variety - and 20g protein, not 10 as I previously mistyped. (fixed)

Strained plan fat free yogurt not made with gelatin = Greek style yogurt, only costs less. Much of the lactose is drained out during the straining, reducing the carbs and doubling the protein concentration. I use a paper towel lined strainer. Add two large tubs of plan fat free yogurt, let drain over night.

May not work for you if your on a low carb diet :)

3 lg ripe bananas
1 egg and 2 egg whites
2 tbsp oil
1/2 cup nonfat buttermilk (can sub FF milk)
1/4 cup splenda
1/4 cup brown sugar
1/2 tsp baking soda
1 tsp baking powder
2 scoops vanilla protein powder mixed with 1.5 cups all purpose flour, plus 1.5 cups whole wheat flour

Preheat oven to 350.
Mash bananas.
Add together eggs, oil, milk, sugars, baking soda, baking powder and mix well.
Mix above with mashed bananas.
Pour into loaf pan (spray with nonstick spray).
Bake for 45 minutes or until toothpick inserted into middle comes out clean.
Cool for 5 minutes on wire rack.
Remove from pan.

So this has been driving me crazy... Do you use the 'no salt added' cottage cheese or what kind do you use?

My bf and I like to make SF jello, but instead of 1 cup cold water, we replace the water with diet ginger ale, which gives it just a slight bit of extra flavor. Then we put it in the freezer and eat it like an italian ice!
