I used to never have this problem but lately it is happening more and more...what am I doing wrong?

When I boil eggs, and go to take the shell off half the dam eggwhite comes off with it!!! so fucking frustrating!!!

I boil them...pour the hot water out, pour some warm/cold water in and start crackin and "shelln" so to speak...they used to come right off but lately they stick like crazy and I lose half the dam egg....wtf?!!!

Am I doing something wrong here or what?:dunno:

I bring the water to a boil and take it off the stove. Let it sit for about 15 min-covered the whole time. After the 15 min I place the eggs in a big bowl of water filled with ice cubes to stop the cooking immediately and it also makes a huge difference in the peeling process.

Try those little tweaks

You can try putting a teaspoon of baking soda into the water to raise the pH. I tried that for awhile until that started going south. I got the "as seen on tv" Egg Genie as a goof and although it only does 7 eggs at a time, I've had no problems whatsoever. Shells come off clean and easy.

Yup boil 15 min, shut the stove off, let em cook, drain the hot water, replace with cold water, let sit for well....the longer the better. They'll peel off no probs.

That is frustrating because you lose half the fuckin egg when you peel it! Like everyone else said though the cause of the problem is not letting em cool down enough...

Yup I just bring to a rolling boil then take off stove and cover for 10min. Then just run cold water over the eggs and peel. Works like a charm everytime! Before my wife taught me this I would lose a good 1/4 of my eggs. She taught me after hearing me scream after I lost half an egg.

I just run cold water over them from the tap and peel away. The schell comes off easily this way. Just do the whole lot at once....that is the secret. So if you boil a dozen eggs and are only eating 6 in that meal but need 6 for the rest of the day, they are done.

yep, don't over cook them. And as soon as they are cooked stick them under running cold water untill they are cool.

had this problem many times myself before and ended up learning from the food network that the fresher eggs are the harder they are to peel, so I started making sure to buy the eggs early enough so they have a few days to "age" in the fridge before using them. I find 4-5 days after purchase normally works best. I follow the method above with no problems.......place all eggs in pan, cover with water, bring to boil, cover, remove from heat, let stand 15 min, run cold water over and peel.

you gotta let the water boil first before inserting the eggs. then lower the heat to a simmer once the eggs have been added. cook for 15 min on your timer. drain then run cold water through the pan and over the eggs while you are peeling. they come off like butter.
