Ingredients:
1/2 yellow onion, diced small
3 cloves garlic, chopped
1/2 Tbsp. Olive or Mac Nut oil
1/2 bag baby spinach
1 can artichoke hearts or 4 fresh artichoke hearts, cooked & quartered
1/2 container Boursin cheese (French herb cheese) or herbed cream cheese
1/2 cup shredded mozzarella cheese
Pita chips or baked tortilla chips

Directions:
Place a large saucepan over medium heat. Add onion, garlic & olive or mac nut oil, & cook until golden brown. Add spinach & stir until wilted. Add artichoke hearts, Boursin & mozzarella; stir lightly until cheeses melt. Pour mixture into a blender & pulse until well chopped, adding a splash of water if it doesn't blend right away. Serve immediately with pita chips or baked tortilla chips.
