Ingredients:
2 tsp. kosher salt
2 live crab, 1.5 lbs. each
2 lemons, halved
Cocktail sauce
Balsamic vinegar
Olive or Mac Nut Oil

Directions:
After you purchase the live crab, store them immediately in a portable cooler; most markets will pack them in ice for you. Once home, keep them chilled & out of the melting ice; they'll stay alive for several hours. Fill a very large saucepan about three-quarters full of water, add salt & bring to a boil. Add crab, cover loosely & boil for 25 minutes. To clean crab, run under lukewarm water (this makes them easier to handle while hot), remove the back shell, rinse out the viscera & pull off the gills. Place crab on a wooden cutting board covered with newspaper for easy cleanup. With a hammer, rolling pin or other blunt heavy object, whack the crab legs in several spots to loosen shells. Serve with cut lemons, cocktail sauce, or a sauce made of equal parts balsamic vinegar & olive or mac nut oil.
