View Full Version : Turkey Sausage with Potatoes, Peppers and Onions

Ingredients:
• 4 links lean turkey sausage
• 2 eight-ounce baking potatoes
• 1 red bell pepper (sliced)
• 1 green bell pepper (sliced)
• 2 medium red onions (sliced)
• 4 pinches sea salt
• 4 pinches black pepper
• 2 pinches dry oregano
• 4 Tbsp. extra virgin olive oil
• 1/2 cup tomato sauce
• 1 1/2 cups chicken broth (low sodium)
• Splash white wine

Directions:
On medium heat, preheat the extra virgin olive oil in a sauté pan. After one minute, add the potatoes. Cover. Stir periodically over five minutes. Add the peppers and onions. Stir, and then cover for another five minutes or so. Add the turkey sausages and cover. After another five minutes, add a splash of wine.

Add the tomato sauce and chicken broth. Cover and cook for about 15 minutes over medium flame. Add the spices. To check if the ingredients are cooked, place a fork into a potato. If the potato slides off the fork, remove the pan from the heat and serve. For each serving, place one turkey link on a plate and spoon the vegetable mixture over top.
