This is similar to some of the protein pancake recipes but with a slight twist.

Cup quick oats
1/2 Cup Fat Free Cottage Cheese
1/2 Cup Liquid Egg Whites
1 Whole Omega-3 Egg
1/2 Tsp Cinnamon
1/2 Tsp Nutmeg **can substitute a little bit of Allspice if preferred**
1 packet Stevia Balance
Fat/Carb Free cooking spray (I use Mazola oil, comes from EVOO)

2 Whole Omega-3 eggs
Few drops of Skim Milk

1. In a blender, mix the first six ingredients until smooth starting with the wet, then spices, then oats (may have to screw around with the speeds as the mixture gets pretty thick).
2. In a loaf tin that has been sprayed with cooking spray, pour in the batter. Cook in the oven for about 20-25 minutes at 350 F.
3. Once the loaf is cooked, let it cool down for a bit or to room remperature, then slice about 3/4 to 1 inch thick.
4. Beat the two eggs and milk and pour onto a plate. Dip the sliced loaf in the egg mixture and then fire it in a sprayed frying pan.
5. Cook until the egg is as crispy as you like it.

Breakdown:
60g Carbs
40-45g Protein (roughly using the brands that I have available to me)
However much fat is in the eggs (this will cary depending on the size)

I usually make these into muffins so I have about a weeks worth of servings. Eventually I'm going to add some raisins, coconut, carrot, apple and pineapple and make morning glory muffins out of them. You could try some cranberries/blueberries and some lemon zest, mixed berries, banana etc. Anything you would think to throw in a muffin you could add to this. Experiment and let me know what you guys and gals think.

Fuck man, I can't wait till I can tinker around with those bad boys in the offseason. The muffins are perfect for travelling too, although they are a bit tastier if you can nuke them for about 40 seconds. Cut them in half horizontally and then sprinkle a packet of Stevia on them. When I am going to make a loaf I may have to hit up Peaceful for some relatively clean icing recipes. Or just throw a good glob of PB or Almond butter on them.
