How many sets a body part do you (typically) do? Do you count warm ups? Or list them separatly? Assuming you do them, lol. Do you do a different amount for different bodyparts?

Typically 3 sets by 4 exercises. Occasionally 4x4 if I feel it's time for the weight to go up. I'm thinking it might be better to go to 4x3 and drop an exercise. That does not count warm up sets.

Typically 6-8 sets, exception being rear delts, traps, calves.
On rear delts, calves, traps I usually do 3-5.
I don't count warmups.
Occasionally on quads I will go to 10 sets.

I warm up on every exercise I do, been doing that since day 1, I don't count my warm up as a working set. My sets vary, for smaller muscles I do 3-5 sets for larger muscle I do 5-8 sets.

I recently posted a session where I was doing 8 sets each. It was a bad arthritis day. Sometimes I need up to 3 warm up sets. Often I do a 'warm down' set. Example. Leg press. 2 wheels 15 reps, 4 15 reps, 6 15 reps, 10 10 reps, 12 10 reps, 14 8 reps, 16 6 reps, 18 4 reps then 6 50 reps. Yipes....10 sets counting warm ups and the down.

I never do the same sets and reps. I always do a minimum of 3, not counting a warm-up set. This depends on the exercise too. Bicep, triceps and shoulders are always higher.

But often times they are similar to what Baldie posted above.

number of sets varies on how i feel, how much time i have,if i need a shock session or if i want some low rep strength stuff..i think over time you learn to listen to your body and we're all different and lead different life styles.there are no rules except the ones we make for ourselves.
