I've read about how good bison is to add to my diet.. I got some.. Looking for recipe to cook it.. can't bbq too much snow outside.. but foreman, stove, oven etc..?

Bison is red meat. Treat it like beef.

I eat Bison (buffalo) EVERY day for breakfast. See nutritional profile on link. I have doing breakfast out at a local cafe which serves me 1/2 pound of buffalo patty, 3 egg white/one yolk scrambled and a bowl of hot frijoles negros (black beans) and...the best damn coffee in Los Angeles.

what ever recipes calls for ground beef sub bison. meat loaf, spanish rice. meatballs, stuffed peppers.

i have a freezer full of ground bison and have been experimenting with it for awhile now. the thing to remember about bison that differs from red meat is because it is so lean, it is very easy to cook all the moisture out of it. there is a small window between being done and being dry, especially on a grill. i use a meat thermometer and watch my burgers closely. now that grilling season is over in my part of the country too, i like to use it to make vats of chili. there is much less issue with over cooking when making things like chili and stew. some people like to mix g. bison with g. beef to add moisture. i find the foreman grill is not very forgiving and although i use it for a lot of different meats, i'd much rather make a bison burger on the stove top, where i can have a little more control. i'm not saying it can't be done, just that i personally don't think it it's optimal. just like i would rather use the stove top for a nice cut of steak than throw it in the foreman.

Great point about not over cooking.

Bison Sheppard's pie is my favorite. Ground bison, sweet potato, green beans, corn, garlic etc...

Very easy and makes enough meals for a week.

Slow and low on bison meat when cooking. Bison meat is the healthiest meat out there - even better than chicken. Here is a good source for the nutritional side of bison - http://tulsablogging.com/bison/ This blog belongs to Dr. Fioravanti who has a bison ranch and has been big on bison for over a decade due to their healthy meat.

Also, there are some recipes on the blog, he posts recipes regularly.

Ground Bison, fry/saute it up in a pan, halfway throw some spinach in. wala.

Shovel a path to the Grill, that is what I do and start grill'n.
