it sucks!!
if i cook i am eating the same food all week.


anyone have suggestions?
simple recipes for one or two people?

1/4 cup parm cheese (i prefer the real grated stuff)
1 tsp oregano
2 cups pasta sauce
4 boneless skinless chicken breast
1 cup mozzarella cheese (watching calories use fat free)
1 pkg any flavor of shake n bake for chicken

Cut up chicken breast into cubes.
Coat with Shake n Bake
Spray baking dish with non stick spray
Add coated chicken
Top with sauce, cheese, and oregano
Bake for about 30-45 minutes at 375 (depends on your oven)

Serve with a nice green salad

2 cups broccoli florets (frozen is easier)
1 tsp basil
1 tsp garlic powder
1 tbsp worchestershire sauce
Jar of Walden Farms Alfredo sauce
4 boneless skinless chicken breast

cooked pasta or spagetti squash

Cube Chicken Breast
Saute till golden brown
While cooking chicken, cook broccoli
Add cooked chicken, broccoli, spices, worchestershire, and sauce, mix well

serve over cooked pasta or spagetti squash

1 pkg of Jenni O turkey Kielbasa
1 pkg of Green Giant Garden Veggie Medley (frozen section of grocery store)

Saute turkey keilbasa
Cook veggies according to package directions

Mix together and eat...

4 nice size pieces of FRESH salmon
Sea Salt/Pepper
Raw Spinach (and whatever other salad fixin's you like)

Heat oven to 400
Season Salmon with salt/pepper
Bake in foil lined pan till flaky
In meantime

create your salad

Serve salmon over salad...

3 Cups Oatmeal
2 Scoops of Vanilla Protein Powder
1 Cup Splenda sugar substitute
1-1/2 Cups of water
2 Eggbeaters (Use the equivalent of two eggs)
2 tsp. Cinnamon
1 tsp. Salt
2 tsp. Baking Powder

Mix water, Protien, eggbeaters and cinnamon. Mix oatmeal, Splenda,
salt and baking powder. Then mix all ingredients use a muffin pan coated
in non-stick spray bake at 350 degrees for 20 minutes. I prefer to use cupcake paper and still spray with non stick.

They freeze nicely. Warm in microwave a bit before eating..

Nice and portable too!

If blueberries are in season toss in some berries (if using frozen berries use a bit less water)

1/2 cup fat free cottage cheese
1/2 cup 10 grain pancake mix (bob's red mill)
1/2 cup egg whites
1/2 tsp vanilla extract (or any flavor you like)
2 pkts splenda
Sugar Free Syrup
Fresh Fruit

Mix egg whites, cottage cheese, extract, and splenda in blender.
Add pancake mix and mix well.

Pour onto preheated waffle iron or preheated skillet (if making pancakes)
Cook until done

Top with fresh fruit and sugar free syrup.

Many times I quadruple this recipe and once waffles or pancakes are cooked I freeze them... if waffles pop in toaster to reheat, if pancakes toss in micro for few...

Here's one I do for a quickie single meal. Fry some tilapia in a pan with Pam. As it cooks mix 1-2 TB reduced fat mayo with 1-2 tsp horseradish. Sometimes I throw in a little parmesan. When you flip the tilapia smear the sauce on the top of the fish. When that side is finished cooking the sauce will be warmed enough. It's really good and very quick and easy.

I lived on Hamburger Helper for a long time :)
to switch it up I would use ground turkey instead... pretty smart huh?
Love that easy to make stuff... straight out da box!

10 Egg Whites
2 Whole Eggs
as much as and whatever kind of veggies you want fresh or frozen (if fresh steam them a bit first)
Grated Cheese (optional)
Salsa

Mix all together (sans salsa), pour into non stick pan (or pan sprayed with N/S Spray)

Bake in 350 degree oven for 30 minutes or until done (eggs are firm)
Top with Salsa

nice and portable, not to bad eaten cold

veggie combos - tomato/broc/onion, tomato/onion/peppers, mushrooms/peppers, sky is the limit

1.5 cups oatmeal
2 Tbsp cinnamon
1/4 cup splenda
3 scoops protein powder
2 bananas
14 egg whites
2 whole eggs

Mix oatmeal, cinnamon, splenda, and protein together in food processor/blender (heavy duty blender)

Add Bananas, mix well.

Add Eggs and Egg Whites, mix again.

Pour into 8x8 pan, or two loaf pans, bake 350 degree oven for 30-45 minutes or until done... watch so you don't burn it on the bottom..

ok only TWO ingredients in the turkey kielbasa and veggies... the veggies are in the frozen food section...

come on.. even a lazy single guy can handle that right???

I actually kind of make that, only I'll just cook up two jenni O turkey burgers with frozen veggies and white rice. Good eatin.

I swear I could just create a business out of cooking for single guys... probably make a decent living... Personal Chef Service... gotta look into that when I move... might be a good way to fund massage therapy/personal training school

and speaking of lazy food, I just had a can of tuna mixed with light mayo and chili oil on white rice. Tastes exactly like a tuna roll to me, and is as lazy as can be. ..without just eating the tuna out of the can, at least.

ok lazy guys... two things....

can of tuna
can of stewed tomatoes - I like the spicy ones....

Open both, dump in bowl, heat in microwave and eat... you might even be able to open up some crackers to go with it.. kinda like chili w/o the beans...

For me.....

Heat meat then eat.....im pretty easy

The foreman cooks meat in like 2 mins so I just eat of the foreman sometimes. No flavor adders like steak sauce or whatnot, just meat and my tea.

Frank's Chicken Wrap

1 Chicken Breast
2 Slices American Cheese
1 Tortilla/Wrap
1 tbsp butter
Frank's Red Hot

Saute the chicken on both sides for about 2-3 minutes each. Then cut up the chicken and let it cook the rest of the way. Toss in your butter once the chicken is cooked, then toss in as much Frank's as you like, mix it all around. Throw the cheese on top and transfer to your tortilla or wrap.

Meat Loaf
3lbs X-tra lean Ground beef
1/2 lb sausage
1/2 chopped onion
1 C Oatmeal
2 Eggs
4 slices Bacon
Worstchestire Sauce, Salt, Pepper, Garlic Powder

Mix all ingredients together except for sausage and bacon. The Worstchestire, salt, pepper, and garlic powder should be used liberally when mixing all ingredients.
Take 1/2 of the mix and lay out on a baking pan. Take the sausage and run it across the loaf. Take the remaining mix and cover the sausage. Bake at 375 degrees. At the 20 minute mark put the bacon on top of loaf and cook for 20 more minutes.

This is enough to last for a week to week and a half.

Chili
2lb X-tra lean ground beef
2 Cans Whole Tomatoes
2 Cans Tomatoe Sauce
1 Can Kidney Beans
1 Can Black Beans
1 Can Chili Beans
1 Pckg. Chili Powder
1/8 C Cumin
1/4 C Garlic Powder

Cook Ground beef. Add to other ingredients and simmer for an hour.
