Ingredients:
8 oz. chicken breast (grilled)
1 cup zucchini
1 cup yellow squash
1 garlic clove, minced
2 tbsp. balsamic vinegar
2 tbsp. red wine vinegar
1 tbsp. extra virgin olive oil
1 tbsp. freshly chopped basil
Sea salt
Black pepper

Directions:
Heat olive oil in a saute pan over a medium flame for 30 seconds. Add zucchini & squash. Stir, & then cover for 2 minutes. Add garlic, cook for 1 minute, then add balsamic vinegar & red wine vinegar. Place grilled chicken breast in the pan, then cover & cook for an additional 2-3 minutes. Add basil, season with salt & pepper to taste, then serve!

This recipe is a great precontest or late-night treat! The vinegars add a sweet 'n' sour flavor to plain old chicken breast. To beef up the calories, serve this dish alongside some brown rice or with a sweet potato.
