Ingredients:
8 oz. turkey breast tenderloins or cutlets
1/2 onion, diced
1 portabella mushroom, cut into 1-inch cubes
1 cup fresh spinach
1 tbsp. olive oil
1/4 cup low-sodium chicken broth
Salt & pepper to taste

Directions
Drizzle olive oil in a saute pan over medium heat. In pan, brown turkey on both sides (2-3 minutes per side). Add onion & mushroom, cook for one minute; pour in chicken stock. Cover & cook for 5 minutes over medium-low heat. Add spinach, salt & pepper. Cook (uncovered) for 2 minutes. Serve with white, brown, or wild rice.
