View Full Version : Korean Bison Burgers With Sesame Slaw

Ingredients:
2 lbs. lean ground bison
2 large egg whites
2 green onions, chopped fine
2 cloves garlic, minced
1 tsp. ground fresh ginger
4 tbsp. tamari or low-sodium soy sauce
3 tbsp. brown sugar
2 tbsp. toasted sesame oil
2 tsp sesame seeds
1/2 tsp. black pepper

Directions:
Preheat grill to a medium-high heat. Mix together all burger ingredients & form eight tightly packed patties. Spray nonstick grilling spray onto grill & cook patties desired doneness. To check doneness, use a meat thermometer or make a small cut into burger to check center.

A rare burger will have a cool & red center with & internal temperature of 120-125 degrees. Medium rare is warm & red (130-135 degrees). Medium has a warm, pink center - not red (140-145 degrees). Medium-well is warm with little or no pink(150-155 degrees). Well done is gray-brown throughout with an internal temperature of 160-165 degrees.Do not press down on burger with spatula while grilling. This will release all the flavorful juices & cause flames to flare.

Serve on a whole-wheat bun with a spicy aioli sauce & the sesame slaw, & any other desired garnishes.

Sesame Slaw
Ingredients:
1 cup shredded red cabbage
1 cup shredded carrots
1.5 tbsp. chopped cilantro
1/2 tsp. crushed sesame seeds
1/2 tsp. rice vinegar
1/2 tsp. toasted sesame oil
1.5 tsp. tamari or low-sodium soy sauce

Directions:
Mix together all slaw ingedients & chill until ready to use.
