Ingredients:
(Serves one)

• 1 cup buckwheat flour
• 1 cup whole-wheat flour
• 1 whole egg
• 1 Tbsp. baking powder
• 1 tsp. cinnamon
• 1 tsp. vanilla extract
• 2 cups water
• 1 pinch of salt
• Extra virgin olive oil spray or butter spray
• Sugar-free syrup

Directions:
In a large bowl, sift all dry ingredients. Make sure they are mixed well. Add the water and vanilla extract. Mix until the powder is mixed into the water evenly, but do not overmix – the more you mix, the heavier and flatter the pancakes. Let sit for about five minutes. Heat a skillet for a minute or so. Spray with extra virgin olive oil spray. Using a ladle, spoon the mixture into the skillet. Allow cakes to take their shape. When bubbles begin to form on the top, flip the pancakes over using a spatula. Leave them cooking on this side just long enough to brown. Once the pancakes are cooked through, place them on a serving dish. Top with sugar-free syrup. This dish makes approximately 10 pancakes. Fresh fruit is always a great addition to pancakes. You can add them to the batter or serve them on top.
