Almond Pound Cake
100g almond meal
20g desiccated coconut
10g whey protein isolate
1/8 tsp salt
½ tsp baking powder
**sweetener to taste
2 eggs
¾ tsp vanilla
1/8 tsp almond essence
90g butter, melted and cooled slightly

** I use 3 tsp each of powdered erythritol and Calfree

Mix the dry ingredients together. Lightly beat the eggs with the essence/s and mix into the dry ingredients. Add the butter and mix well. Pour into muffin pans or small loaf pan and bake for 20-25 minutes at 175ºC fan-forced until browned on top.
Makes 4-5 serves.
