Ingredients:
1/2 lb. potato (about 1 large), peeled & diced
2 3.5 -oz. cans sardines in water, drained
2 green onions, sliced
1/4 cup chopped parsley
2 garlic cloves, chopped
1 Tbsp. grainy mustard
1 large egg, lightly beaten
Salt & pepper to taste
1/3 cup Panko bread crumbs
1 Tbsp. vegetable oil

Directions:
Steam or boil potato until very tender. In a large bowl, mash it with a fork & mix in sardines, onions, parsley, garlic, mustard, egg, salt & pepper. Form into four patties & coat with bread crumbs. In a skillet, heat oil over medium heat. Cook patties for four minutes pr side or until well browned.
