Step 1
Preheat oven to 450 degrees F. Cut one 6-ounce potato into 1/2-inch cubes. In a bowl, mix 3/4 cup egg substitute, salt, pepper and potatoes.
Step 2
Lightly coat a cast-iron (or oven-safe) skillet with olive oil cooking spray; then, add the mixture and bake uncovered in the oven for 20 minutes.
Step 3
Carefully remove skillet from oven and let stand for 5 minutes. Cut into wedges and serve.
Serves one
Calories: 325
Protein: 23 grams
Carbs: 37 grams
Fat: 9 grams

I make something real similiar, but on the stovetop with a lid. Also, you know you gotta have some cheese in a dish like this. I think I may try your recipe but add a couple oz's mozzarella and some spinach... Yeah that sounds good.

Ah, I see how it is-you guys one upping ^me with the turkey bacon, lol. Nah, that's actually a great idea. I always forget about turkey bacon.

Mushrooms, peppers, and onions- oh my! Lol, this fritata is getting loaded! It's definitely sounding a whole lot more appealing than just taters and eggs... Mmmm, I'm hungry.
