View Full Version : Turkey Cutlets with Peaches 'n' Greens

Ingredients:
2 turkey cutlets (8 oz. total)
1 tbsp. lemon juice
1 tsp. olive oil
1 shallot, minced
1 tsp. Dijon mustard
1 tsp. honey
1 tsp. lemon zest
1 peach, pitted, cut into cubes
3 oz. baby arugula
Salt & pepper to taste

Directions:
To prepare dressing: Combine lemon juice, olive oil, shallot, Dijon mustard & honey; set aside. Heat grill (indoor or outdoor) to medium. Place turkey cutlets on grill & sprinkle with salt, pepper & lemon zest. Cook on both sides (about 5 minutes per side), turning only once. Set turkey aside. In a bowl, toss peaches & arugula with salad dressing. Serve turkey cutlets over salad.

Side Note:
If you don't want arugula, then use spinach. Try grilling the peaches first, then cut them up to bring out the sweetness of the peaches or have them as a dessert.
