Ok guys, so I discovered this a few weeks back. It's perfect for when you are preparing your week's meals. It makes alot so it'll last you most of the week. You just mix it in with your protein and rice..yumm!!
Ok, so you are going to need a very LARGE mixing bowl.
In the bowl, combine:
-1/2 eggplant cut into 1/2 -3/4 in cubes
-4 zuchinni cubed (I like to peel mine first)
-4 celery stalks cut julienne style
-1/2 onion chopped
-1 green pepper chopped
-8-10 mushrooms chopped
-2 c cooked spag squash
-2 tsp minced garlic
-1 can salt free diced tomatoes
-1 tbsp balsamic vinegar
-2 tbsp splenda
-1/4 c lemon juice
-1 tbsp spicy brown mustard
-crushed red pepper flakes (go easy unless you like it spicy)
~~I like to use generous amounts of herbs/spices
-dried parsley flakes
-dried oregano
-dried basil
-paprika
-garlic powder
-onion powder
-pepper/salt
Spread evenly in a large cake pan and cover with foil.
Bake on 375 for at least an hour. Maybe a little more, depending on how soft the eggplant and zuch are. Also it gets juicy when it's about done.
Take it out, stir it up and let it cool. Store in tuberware and serve when you are preparing your meals. It is a great addition to food when you are getting 'bored'. It gives alot of flavor too!! :yep:
