View Full Version : Stuffed Mushrooms with a Twist

Ingredients:
3 large stuffing mushrooms (stems removed)
1 can of tuna, packed in water
2 tablespoons of fat-free mayo
2 tablespoons of fine, plain bread crumbs
1 teaspoon of chopped celery
1 teaspoon of chopped red onion
1 pinch of black pepper
1 pinch of fresh parsley

Directions:
Preheat oven to 350 degrees. Strain the tuna fish, removing all excess water & place in a mixing bowl. With the back of a fork or spoon, break down the tuna until it's flaky. Add the remaining ingredients & mix well. Using a tablespoon, place the mixture into each individual mushroom. Depending on the size of the mushroom, you may have extra "stuffing." Continue to stuff mushrooms until you are out of stuffing. Add 1/4 cup of water to an oven-safe pan. Place the mushrooms in the pan, & bake for 25 minutes. Remove from the oven & serve!

Nutrition Facts:
270 calories, 44 g protein, 10 g carbs, 6 g fats.

Side note: I'm wonder if you would try using a sushi quality of fish for this meal. Or try of types of protein & see what happens. Have fun when cooking.

Damn, sounds like an awesome way to change up tuna. I'm going to try this out.

awesome recipe. im going to try this with the next carp i catch. meanwhile i may give it a shot with shredded chicken
