YES….PASTA ON A LOW CARB DIET!!!!!

First and foremost, if there is ANYTHING on this site I would suggest for you to invest in…it is BY FAR Miracle Noodles!!! I have provided 2 links to them on my site www.sinorslim.com because you can only purchase them online. One of the links is to purchase only 1 packet for those of you who want to “try it out” and the other is for a batch which comes out cheaper. For those who only purchase one packet at first…I guarantee that you will be running to your computer to order more the second you have them. These are FANTASTIC and will allow you to have pasta every day if you wish!

Miracle Noodles are a product that I came across online and I am addicted to now! You can toss them with pretty much any toppings and sauces and not have to worry about the carbs or anything else! They are made of naturally water soluble fiber with no fat, sugar, or starch, contain zero net carbs and zero calories. They are made of a healthy natural fiber called Glucomannan and are wheat & gluten free and kosher. Miracle Noodles easily absorb the flavors of any soup, dish, or sauce, are instant and come in a variety of styles. Just to top it off, they have shown beneficial effects backed by medical studies for Type II Diabetes, Constipation, Obesity, and Cholesterol

Ingredients for Pad Thai: (recipe makes 2 servings so "half" everything if you're only cooking for one)

2 Packages of Miracle Noodles
1/2 Cup Bean Sprouts
10 Extra Large Shrimp
1/4 Cup Cashews

Ingredients for Pad Thai Sauce: (recipe makes 2 servings so "half" everything if you're only cooking for one)

2 Tbsp Walden Farms Calorie-Free Sesame Ginger Sauce
2 Tbsp Peanut Sauce
1/2 Tbsp Safflower Oil
1/2 Tbsp Low Sodium Soy Sauce
1/2 Tbsp Peanut Butter
1/2 Tbsp Tomato Paste
1 tsp Fish Sauce
4 Packets of Sweetener (I used PureVia)

Directions:

1. Rinse miracle noodles and thaw shrimp

2. Remove shrimp tails and cut into bite-size pieces

3. Boil miracle noodles in a pot for about 1-2 minutes and drain

4. Saute shrimp on stove in a non-stick skillet until shrimp are cooked and no longer translucent

5. Combine all sauce ingredients in a bowl and mix thoroughly

6. Mix together sauce, noodles, shrimp and bean sprouts in a pot on low heat

7. Crush cashews and set aside (I find it works best to place the nuts on a plate, place a paper towel over them and crush them with the palm of your hands)

8. Pour half of the noodle mixture on a plate, top with half of the crushed cashews and enjoy!
