This muffin recipe is single serving and is great for getting the fiber you need during the day in a way that tastes good.


Basic Flax Meal Muffin Recipe

3 Tbsp flax seed meal
1 tsp splenda
1/2 tsp baking powder
1 tsp cinnamon
1 t oil
2 eggs

Stir all ingredients together in a glass measuring cup. Microwave for 1- 1.5 minutes and turn out on to plate.






Chocolate Coconut Flax Meal Muffin

1 tbsp flax seed meal
1 tsp splenda
1/2 tsp baking powder
1 teaspoon coconut oil
1 square Bakers unsweetened chocolate
2 eggs


Chop bar of chocolate and add to glass measuring cup with coconut oil. Melt in the microwave for approx 75-90 seconds. Remove and stir to make sure there ar no lumps, then add all ingredients except eggs and mix well. Add eggs. Microwave for 1.5 minutes. turn out onto plate.

This makes a semi sweet muffin - you may want to increase the splenda by an additional tsp. You can also substitute the unsweetened chocolate for a sugar free chocolate bar.
