Mexican Meatballs
Ingredients:
14 oz. beef, extra lean, ground
1 cup oatmeal
1 egg, whole
2 egg whites
1/2 package taco seasoning mix
Olive oil cooking spray
Directions:
Preheat skillet over medium heat. In a small bowl, combine the beef, oatmeal, eggs & taco mix. Kneed & roll the mixture into little balls. Coat skillet with cooking spray; place meatballs in the skillet, flipping often for 5-7 minutes. Serve.
Nutritional Facts: Serves two, per serving.
