are denatured egg proteins better?
i understand that when eggs are cooked they become denatured and that's why the egg white becomes a solid white, and that this process makes the proteins easier for digestion by enzymes. what i don't understand is which type of egg is most beneficial. does the denaturation of the egg burn off some of the positive components of the proteins?would it be better to consume raw eggs?

Consuming raw eggs has risk for disease and can cause serious health issues I wouldn't suggest eating them. Denatured eggs doesn't mean it's unhealthy. Eggs are fine to eat cooked. If your worried about heating them don't be. There's nothing to worry about. You will get the same benefits from them.

Either is fine. All proteins denature to a certain degree once they've been cooked, but unless you over cook the hell out of them it doesn't make a huge difference. As far as eating raw eggs, the danger there is really overstated. The old fear is that you'll get salmonella from raw eggs. The salmonella bacteria lives on the outside of the egg shell, not the inside. As long as your buying store bought eggs the chances of getting salmonella from eating them raw is very low.
