A Healthy Mayonnaise?
I sent this to Chris for the "Ask Dave" segment of HMR, but I figured I'd post it here to see if anyone considered this. I've seen earlier posts where people by non-fat mayonnaise, but as many of you know, fat free "anything" doesn't taste very good, and they typically add more sugar to the product than in the fat forms.
Fat is a big part of Dave's Keto diet.
I looked up a recipe for it and it seems pretty simple to make in a mixer or food processor
using these ingredients:
Egg yolks
White wine vinegar
Lemon juice
Water
Salt
Vegetable oil
I'm wondering if you replaced Egg yolks with those from Omega-3 eggs,
and the vegetable oil with Dave mac nut oil, would this then be a healthy
condiment for people to add to their salads and sandwiches - even on a ketogenic diet.Last edited by PTB; 10-14-2013 at 01:17 AM.

Looks pretty good. I have made mustard with apple cider vinegar. That might be another substitution that could add more of a health benefit. Let us know if you whip up a batch.

Why not just buy safflower mayo? Lots of health benefits, tastes great, and most importantly no effort.
