Bodybuilding, Drugs and Risk is the best research study on bodybuilding that I have found. (It doesn't have a lot of competition at book length.) The author treats bodybuilders as a demonized subculture that is misunderstood by much of the non-bodybuilding public (especially those who know no one involved in the bodybuilding life). Bodybuilding is treated in terms of risk taking, but the overall thrust of the book is to defend it from its detractors.

I've seen this & it looked pretty good to me, although I haven't read it. It has research articles on a variety of subjects.
Critical Readings in Bodybuilding (2011, Routledge). Amazon has a "look inside" feature on it.

Little Big Men: Bodybuilding Subculture & Gender Construction (SUNY, 1993) is a solid anthropological study of gym culture. It is a little dated at this point, but I think much of its analysis is valid (unlike The Adonis Complex, which I think isn't).
If you haven't seen The Adonis Complex, here it is. But I think its methodology is weak & its conclusions are dubious.

The Wiki page on Muscle dysmorphia is pretty good. I edited it to clarify several statements, which were sometimes unclear.
