cooking for the single man
it sucks!!
if i cook i am eating the same food all week.
anyone have suggestions?
simple recipes for one or two people?

Oven Baked Chicken Mozzarella
1/4 cup parm cheese (i prefer the real grated stuff)
1 tsp oregano
2 cups pasta sauce
4 boneless skinless chicken breast
1 cup mozzarella cheese (watching calories use fat free)
1 pkg any flavor of shake n bake for chicken
Cut up chicken breast into cubes.
Coat with Shake n Bake
Spray baking dish with non stick spray
Add coated chicken
Top with sauce, cheese, and oregano
Bake for about 30-45 minutes at 375 (depends on your oven)
Serve with a nice green salad

Chicken and Broccoli Alfredo
2 cups broccoli florets (frozen is easier)
1 tsp basil
1 tsp garlic powder
1 tbsp worchestershire sauce
Jar of Walden Farms Alfredo sauce
4 boneless skinless chicken breast
cooked pasta or spagetti squash
Cube Chicken Breast
Saute till golden brown
While cooking chicken, cook broccoli
Add cooked chicken, broccoli, spices, worchestershire, and sauce, mix well
serve over cooked pasta or spagetti squash

Turkey Keilbasa and Veggies
1 pkg of Jenni O turkey Kielbasa
1 pkg of Green Giant Garden Veggie Medley (frozen section of grocery store)
Saute turkey keilbasa
Cook veggies according to package directions
Mix together and eat...

Salmon and Salad
4 nice size pieces of FRESH salmon
Sea Salt/Pepper
Raw Spinach (and whatever other salad fixin's you like)
Heat oven to 400
Season Salmon with salt/pepper
Bake in foil lined pan till flaky
In meantime
create your salad
Serve salmon over salad...

Muscle Muffins
3 Cups Oatmeal
2 Scoops of Vanilla Protein Powder
1 Cup Splenda sugar substitute
1-1/2 Cups of water
2 Eggbeaters (Use the equivalent of two eggs)
2 tsp. Cinnamon
1 tsp. Salt
2 tsp. Baking Powder
Mix water, Protien, eggbeaters and cinnamon. Mix oatmeal, Splenda,
salt and baking powder. Then mix all ingredients use a muffin pan coated
in non-stick spray bake at 350 degrees for 20 minutes. I prefer to use cupcake paper and still spray with non stick.
They freeze nicely. Warm in microwave a bit before eating..
Nice and portable too!
If blueberries are in season toss in some berries (if using frozen berries use a bit less water)

Waffles/Pancakes
1/2 cup fat free cottage cheese
1/2 cup 10 grain pancake mix (bob's red mill)
1/2 cup egg whites
1/2 tsp vanilla extract (or any flavor you like)
2 pkts splenda
Sugar Free Syrup
Fresh Fruit
Mix egg whites, cottage cheese, extract, and splenda in blender.
Add pancake mix and mix well.
Pour onto preheated waffle iron or preheated skillet (if making pancakes)
Cook until done
Top with fresh fruit and sugar free syrup.
Many times I quadruple this recipe and once waffles or pancakes are cooked I freeze them... if waffles pop in toaster to reheat, if pancakes toss in micro for few...

Here's one I do for a quickie single meal. Fry some tilapia in a pan with Pam. As it cooks mix 1-2 TB reduced fat mayo with 1-2 tsp horseradish. Sometimes I throw in a little parmesan. When you flip the tilapia smear the sauce on the top of the fish. When that side is finished cooking the sauce will be warmed enough. It's really good and very quick and easy.

I lived on Hamburger Helper for a long time
to switch it up I would use ground turkey instead... pretty smart huh?
Love that easy to make stuff... straight out da box!Just doin' my thing.
