What's the purpose of the vegan diet? I'm not sure what considerations need to be given to accommodate the anemia thing, but I'm sort of concerned about any diet that doesn't support the ability to do some exercise. That type of diet, sort of by definition is going to promote catabolism. I'm not saying a vegan diet doesn't support exercise, but if whatever your diet is doesn't support exercise, then its not really a diet that is going to produce healthy or maintainable results. I suppose if you're bedridden or something, but otherwise I'd at least make sure your diet is providing at least enough fuel to get up and get going. Increased lean muscle mass helps burn fat better than just nutritionally limiting yourself.
