My desire to find a good GUACAMOLE RECIPE (as per my plea on this weeks HMR) led to this great email from Jeremy Girmann......... It is both informative, accurate, and even scientific at points! I love the ETHYLENE gas tip! We must all thank him in!
After hearing you talk about guacamole on the most recent HMR show, I had to shoot a message your way. Guacamole is one of my most favorite things to eat and I make it virtually every night, as the health benefits are immense. Over the years I’ve learned that a simple recipe is usually the best tasting recipe (plus ease of preparation is always a plus). I also feel the need to qualify my recipe recommendation by saying that my fiancé’s mom is from Mexico and she gives it the nod! Here’s what I do:
1 1 RIPE avocado
2 ¼ tsp. Lemon Juice (fresh is best but I usually use a few squirts from the bottle)
3 ¼ tsp. Cilantro flakes (Once again, fresh is best but I usually use ¼ tsp dried cilantro flakes from a spice jar)
4 ¼ tsp. Salt (few shakes – usually a bit less than ¼ tsp.)
5 ¼ tsp. Onion Powder (Fresh onion can be used but like you, I don’t like the an overwhelming onion flavor so using powder is mild and keeps the guac smooth)
That’s it…5 ingredients for creamy and delicious guacamole. Three things that are often added are garlic, tomato, and pepper. I don’t think that these things have any place in guacamole since we’re not making salsa. (I think that they actually take away from the taste of the avocado.)
A few extra tips:
You’re right…the best way to find a ripe avocado is by pushing in on the stem. The avocado should be soft but not squishy. Avocados that are too firm make terrible guacamole. Unfortunately, however, avocados only remain ripe for a very short period of time since the monounsaturated fats oxidize easily. This is why I always buy a few ripe avocados and a few firm avocados. The firm avocados will usually be good to go within a few days. You can even speed the ripening process of firm avocados by placing them in a paper bag either by themselves or with fruits such as apples, bananas, or tomatoes at room temperature. The fruit releases ethylene which facilitates the ripening process. The bag traps these gases and also provides a dark environment in which avocados ripen best.
I think that I once saw a video of you peeling an avocado. I used to do the same thing but I learned a better way. Peeling wastes both time and precious avocado. The best thing to do is to take a sharp knife and make one vertical cut in the avocado. Then rotate the avocado and allow for the knife to make a circumferential cut around the pit so that the two halves will simply come apart. Next, use the knife to flick the pit out of the half that it stuck to. Then all that you have to do is take each half and squeeze the skin together (almost like you’re folding it in half) in order to squeeze the inside of the avocado out. (Some use a spoon to scoop the avocado out but I find that squeezing it is easier and faster.)
Also, I usually start mixing by using a fork and a knife to cut the avocado. Once it’s in smaller pieces I just mash it with the fork.

I now know why Jerome seems to be in shape all the time, its because he laughs so much... surely he is burning up those extra calories. When i first watched Jerome in vids with Bob Chic i was kind of annoyed by him, i felt like he was trying to get attention or whatever, but now... i really like the guy, and see that he has so much energy for the sport and for life in general. I think hes great!
And Jerome if you see this, that Planet Fitness commercial was hilarious. Keep up the good work, and congrats on the Pro card in 2010!! Long deserved. Next time im in Cali i'll let Dave P know and maybe you can kick my ass in Ferguson's INFERNO.

Here are some GUACAMOLE recipes from GAIL AUERBACH!!!
Creamy Guacamole
I'm not a fan of regular guacamole, so I added a few extra ingredients to improve the plain version
Number of Servings: 6
Ingredients
- 1 - Avocado
4 Tbs - Fat Free/Low fat Sour Cream*
1 Tbs - Fat Free/Low fat Mayo*
3 Tbs - Salsa (any flavor)
1 Dash - Salt
1 Dash - Seasoning Salt
* To reduce caloric intake use the fat free versions of these foods
Directions
Mash 1 pitted avocado
Add Sour Cream, mayo, and salsa
Mix together until creamy
Add garlic salt and salt to taste
Use your favorite tortilla chips (the baked ones are really good, too)...
Number of Servings: 6 Guacamole w/ yogurt
Minutes to Prepare: 10
Number of Servings: 5
Ingredients
- avacado, 4 oz
Salsa, 3/4 cup
Dannon All Natural, Plain Nonfat Yogurt, 3 oz
Onions, raw, 0.25 cup, chopped
Cilantro, raw, 2 tbsp
cumin 1/2
water 1/4 cup
Directions mix together and blend til smooth
Number of Servings: 5 Smooth and Limey Guacamole
Number of Servings: 8
Ingredients
- 1 avocados
Juice of one lime
3/4 cup yogurt, low fat
4 tbsp cilantro, raw
garlic optional
Directions Blend all ingredients together with hand mixer and don't use that stupid bullet thing you have!
Makes about 1-1/2 cups, or 8-3 tbsp servings.
Number of Servings: 8
- 1 - Avocado

Jerome kinda reminds me of Mike Tyson - not in personality, but his look, and his lisp.
He should have did the HBO Mike Tyson movie instead of Michael Jai White.
