for those that eat buffalo
i scored 20 lbs of ground buffalo from an ebay store for 43.00 plus ship. from the same store, through its website, it was alot more. just wanted to share...

I've bought buffalo a few times on Ebay.
Unless there's a bench press contest I joined and didn't know about it doesn't matter how much I bench.

I use Ground Buffalo in a taco salad type mix, Mind you that this is not during a low carb diet.
Cheese
green onion
Ground buffalo
Cilantro
Tabasco
ice berg lettuce (fiber water) lol
if you want to add Kcals add Organic black bean chips

The buffalo I bought was shipped in a sealed container with dry ice in it. You ahve to cook it low and slow because it's about 94/6. Too fast and it gets dry quickly. I used mine in my nearly famous buffalo black bean chili!!! 164 calories a cup and damn good!!
Unless there's a bench press contest I joined and didn't know about it doesn't matter how much I bench.

Well I don't want to be damned!! So here goes:
Ingredients
1 lb of buffalo (or skinless turkey)
1/2 green pepper
3 med onions
2-3 cloves garlic
2 tsp chili powder
1 tsp sea salt
1 tsp garlic salt
1/2 tsp black pepper
1 tsp red pepper flakes
1 lg can petite diced tomatoes
1 lg can tomato paste
1 lg can tomato sauce
1 can black beans drained and rinsed
Brown the buffalo with with some EVOO and cook the chopped up green pepper, onions, and garlic cloves. This helps to season the meat. The buffalo must be cooked low and slow so it doesn't scorch. Add the chili powder, sea salt, garlic salt, pepper, red pepper flakes. You will not need to drain the meat because there will be little if any grease from the meat. Add the diced tomatoes, tomato paste, tomato sauce and the black beans. You will need to add water to reach the desired consistency. I use tomato products that have no added sugars. The longer this simmers the more the flavors marry. I have simmered it for 3-4 hours and simmered it 30 minutes and if you can I recommend the longer time. The calorie count is around 165 calories per cup. Not sure what the other macro breakdown is because I never took the time. It is very good.
