Pumpkin Muffins
Pumpkin MuffinsSingle Batch (10 muffins)
DRY
2/3 cup Ground Oatmeal
1 ½ scoops Protein Powder*
½ cup Splenda (spoonable)
1 tsp Baking powder
1 tsp Baking Soda
1 tsp Salt
½ tsp Pumpkin pie spice
WET
1/3 cup Cottage Cheese
½ cup liquid or 5 egg whites
½ cup Pumpkin
1 tsp Vanilla
Mix dry ingredients together. Mix wet ingredients together in food processor and blend until smooth. Pour batter into muffin cups that have been sprayed with cooking spray. Bake at 350 for 15 minutes, or 10 minutes with convection.
Per muffin as per above recipe:
6.18 g Protein
6.42 g Carb
0.46 g Fat
Protein powder used is GNC Whey ISO burst. Per 2 scoops:
168 cals
40 g Protein
1 g Carb

Damn. I saw you started this thread and I though it was going to be something I've been hoping for.
But it's about something different I'd like to sink my teeth into.
